Nothing says Mexican like nachos & cheese dip. Here’s my version of a dip with chorizo. Ole’

Queso Fundido (my version)

16 oz. chorizo pork sausage
2 garlic cloves (minced)
2 cups shredded queso
2 cups shredded Mexican blend cheese
1 green onion (sliced)
1 Roma tomato (diced)

Preheat oven to 350 degrees. In a oven proof skillet (I use cast iron), brown the chorizo. Add garlic and cook 1-2 minutes. Sprinkle both cheeses over browned chorizo. Bake 10 minutes or until cheese has melted. Garnish with green onion, tomato & cilantro. Serve with nachos or pita chips.
