I had a bottle of pineapple ice cream topping sitting in the frig for awhile…I hate to waste anything. I was thinking what I could make with it? Well…here’s what I came up with. Try these tasty grilled pineapple glazed meatballs the next time the grill is fired-up.
Pineapple Glazed Meatballs
Meatballs:
1/2 cup bread crumbs
1/3 cup water
1 lb. ground meat (beef, veal, pork or any combination of the two or three)
1/3 cup grated Parmesan cheese
1/3 cup fresh parsley
1 egg
1 garlic clove (minced)
dash salt
dash pepper
oil for frying
skewers
fresh pineapple chunks
fresh assortment of bell pepper chunks
In a bowl, combine the bread crumbs & water. Stir & set aside. In another bowl, combine the next 7 ingredients. Add the water & bread crumb mixture. Mix well. Roll into golf ball size meatballs. In a skillet, add oil; heat to medium & brown meatballs on every side, but do not cook till done. Thread the meatballs on skewers alternating with fresh pineapple & bell pepper. Place the prepared skewers on a hot grill & baste with the pineapple glaze. Grill until the meat is done.
Glaze:
1 (12 oz.) jar pineapple topping
1/4 tsp. ground ginger
1 Tbsp. soy sauce
1 tsp. water
dash salt
In a saucepan, combine all 5 ingredients. Heat to warm. Set aside until ready to use. (Refrigerate leftovers & use on other meats or as a dipping sauce.)
(Note: I pound of ground meat makes approximately 16-18 golf ball size meatballs.)
